The town of Carovigno is part of northern Salento, in the province of Brindisi, and is a famous center of olive oil production. “Surrounded by the lush green of the trees planted on slopes” is how the Italian poets described it. The Castle of Carovigno bears the name of the city in which the ancient Carbina was built, and like all fortified monuments it’s the highest part of the area while underground it’s possible to visit the “dungeons” used as cells and cellars. Worth visiting is the historic centre with its four proud towers, three of which are still standing. Not far away there are the churches of the town: the mother church dedicated to the Assunta and the “Chiesa del Carmine', with frescoes from the XVIII century. The city of Carovigno hosts every year the “Press Tour Carovigno ' which organizes guided tours, olive harvesting and tastings.
